How does the business operate on a daily basis?

The manager opens & closes & with the rotating staff serve patrons & operate the POS system.
The necessary ingredients are ordered in, then prepared on the day for the likely forthcoming trade, then final cooking or preparation as per the received patron order, followed by clean-up operations after meals & the end of trade, as well as, cash-up & closure.

Are there up-to-date Management Accounts available?

The turnover for the last 7 months totals R2.2m, but has grown from a monthly R192k to R384k, with a 12 month period expected to reach R4.1m.
After all expenses are covered, the NP at 7 months is R300k & at year-end should be R600k plus (the Report shows 7 months actual & 5 projection; as if started in Sept 2024, when it actually started in Jan 2025 - this was necessary for the ALDES system to show 12 months).
MA's are produced monthly from the POS System (which the manager & staff use) & will be the basis for a buyer to analyze the results/finances of the business.
